Raw Oyster bar in Colorado  | |  I spent some time in Main visiting a friend last summer and recall a wonderful supper where the first course was a raw oyster bar. I would like to try and recreate this experience for some of my friends in Colorado but, honestly, being a mountain girl I know nothing about selecting, preparing and serving oysters.
Any tips for selecting the freshest oysters and recipes for accompaniments would be quite welcome.
