I love to cook and bake as so many of you know but I need some help. I do not need recipes exactly more of what to make. I do not usually make lunch for a number of people, brunch or dinner but not lunch. Anyway, for Mother's day I will be having a few people here and I need ideas. It has to be a dairy meal (no meat of any kind). My dad asked me to make mac & cheese because he isn't allowed to have it when he is at his house and the boxed stuff my sister gives the boys isn't the same. My mom wants an eggplant dish but I cant think of what kind. I also need help with sides or anything else you can think of.

razcal2267 (7874) | 6 months ago | I am not exactly sure why but you saying eggplant lasagna reminded me I have a recipe for eggplant burgers. I think I will make those. So far I have: salad rolls/bread sticks mac & cheese and eggplant burgers

lilybug (8735) | 6 months ago | VEGETARIAN VERDE ENCHILADAS 12 (6-8 inch) corn tortillas FILLING: 1 tbsp. olive oil 1/2 c. diced red bell pepper 5 tsp. minced garlic 2 c. cooked white rice 1 c. frozen or canned corn 1 c. canned refried beans SAUCE: 1 (10 3/4 oz.) can condensed cream of broccoli soup 3/4 c. mild salsa verde or green taco sauce 1 (7-8 oz.) can chopped green chilies, undrained 1/2 c. milk 1/3 c. sliced scallions 1/2 c. chopped fresh cilantro 1/8 tsp. crushed fresh cilantro 1/8 tsp. crushed red pepper 1/3 c. sour cream 8 oz. shredded Monterey Jack cheese Heat oven to 350 degrees. Have ready a 13 x 9 inch baking dish. Wrap tortillas in stacks of six in foil. Heat in oven about 10 minutes until warm and pliable. Heat oil in a large, non-stick skillet. Add bell pepper and garlic and cook until pepper is tender, 1-2 minutes. Stir in rice, corn, and refried beans. Heat through. Spoon a heaping 1/4 cup of filling slightly below the center of each warmed tortilla. Roll up and place seam side down in baking dish. Cover with foil to keep tortillas from drying and splitting.

2. sparkofinsanity (1918) | 6 months ago | Take a platter and arrange sliced cucumber and tomato (overlapping) on it. A sprinkle of lemon juice and salt and you have toppings for the burgers or just as a side treat to the mac and cheese. Another platter with pickles, cherrie tomatos, devilled eggs, baby carrots or raw broccoli and cauliflower flowerettes would be fun too. Little nibblers I call these to round out the main dish. Let us know what you decide and how it goes my fav Little Rascal! LOL

3. Tallymommy (1784) | 6 months ago | I make mostly meat dishes, but you could create some kind of pasta dish, maybe one with pesto and a side of garlic bread? I would post this in the cooking section too to get plenty of responses...her is a really good eggplant side I've made: Eggplant Parmigiana 1 eggplant (1 pd.) 1 egg ΒΌ c all-purpose flour 2 Tbsp. cooking oil 1/3 c grated Parmesan cheese 1 c spaghetti sauce 1 c shredded mozzarella 1. Preheat oven to 400 degrees. 2. Peel eggplant and cut into flat slices. 3. Beat egg in one bowl, and put flour in another. 4. Heat oil in skillet. 5. Place slices in egg, flour, and then in the oil. 6. Cook for 5 minutes, flipping until golden brown. 7. Drain on paper towels. 8. Place slices in a single layer in a baking dish. 9. In order, sprinkle with Parmesan, sauce, and mozzarella. 10. Cook for 10 minutes and serve!
