 I think I did it. I came up with a meal that will please everyone that will be here for Mother's day. I so wanted to do an eggplant dish because my mother loves eggplant but very rarely eats it because part of it ends up gong to waste because it is one of the foods that my dad can not stand. After much though and input from others here and else where this is what I came up with:

My mom said she is bringing the salad so I will be making a the dressing to go with it. A mustard vinaigrette dressing http://www.thedailygreen....
For dessert I will be making (hopefully in the cups) lemon sorbet with some raspberries and blackberries as garnish.
Is there anything I am forgetting?
Why is there always one person that can make meal planning difficult to figure out?
Where will you be on Mother's day and will you be able to relax that day/

I plan on spending the day at home, relaxing. My kids and hubby usually take me out for dinner. They take care of the other meals and cleanup on Mother's day which is really a nice break for me.

| 3. lilybug (6428) | 3 months ago |  I think you have it figured out. I was going to mention bread, but I see you addressed that in another post. Are you sticking to just cheddar on the mac and cheese or are you going to use a mixture of a few different cheeses?
I have no idea what I will be doing on Mother's Day. I might just spend the day at home. I had lunch with my mother and my brother yesterday as a Mother's Day treat early, so he could spend the day with his wife.

It's funny that you mention eggplant (or aubergine as I call it). It's vegetable I've never really enjoyed but twice this week I've been served it whilst eating with friends and both times it has been delicious. I guess that goes to show that the preparation is everything.

Im going over my aunts house to do some laundry and maybe I fix my aunt something nice. I wish I still had my mom with me. She has been gone for many years now and I really do miss her.
