I have rediscovered the joys of simple food. You don't get much simpler than an egg sandwich. Take one hard boiled egg, a little salt and pepper and a spoonful of mayonnaise (or not as you wish). Mash it all up, spread on the bread of your choice and........ heaven! What simple foods have you rediscovered recently?

I know just what you mean! My father LOVED fried egg sandwiches. My mother enjoys egg salad sandwiches. I won't eat either one or boiled eggs, but I sure can enjoy a scrambled egg sandwich with cheese!! In fact, I had three eggs with cheese this morning along with my toast. I was in SUCH a mood for eggs!

As for a return to the "simple pleasures" of eating, I recently began buying yogurt again. What a treat!! I hadn't had any in quite a while, but I sure have been enjoying them. It's got the consistency and satisfaction of pudding, but is more beneficial because of the bacterial cultures - just a nice healthy treat.

Hmmm..That's perfect..I miss that too! the simple food I had lately was the potato skin, I really don't know how it was made..LOL! I find it very yummy and delicious!

I like potato skins too. Trouble is they are usually filled with something very fattening.

hi P1ke you made my day with this discussion......
my husband likes his sandwich as follows, first spread some butter or margarine on the slice of bread, then peel the piping hot egg slice it and put on buttered bread with some salt. You have to eat quickly as the butter starts melting fast.

I have discovered something else, take two slices of bread, put a bit of mayo or saladcream on one slice, then some iceberg lettuce and top with second slice. I know you dont like iceberg lettuce (we do) but it makes a great snack.

hi P1ke, sure you can try with other veggies apart from lettuce. I just find that lettuce is the least messy veg to have on a sandwich compared to others.

I make a fried egg sandwich on toast. Fry an egg in a pan breaking
the yolk but not mixing it up. Some whole wheat toast and place the
egg on the bread. No mayo or tomatoes etc. Just the fried egg and toast.
I eat this as a late late night snack often.

I haven't really discovered anything, but what I did enjoy lately was a bread with cheese plus Parmesan on it. When you have it, just put it in the microwave for 8 minutes and you will enjoy the 'double cheese toast':)

Nope if you know how to use the 'more advanced' functions installed on microwave oven. I think that every MW should hold some instructions what type of food can be made with specific function, check it out;)

It works just as well as it ever did. The only thing that's wrong with it is that the interior light has failed. If I could be bothered to get a new bulb it would be just fine. In 1986 it was $500. Today you'd pay about $200 for a similar one. So it was a major expenditure at the time.

To be honest, since I'm single pretty much all the foods I eat are simple things; it's kinda hard to prepare an actual meal (3 or more courses) for just one person. I mean, it can be done, but I can't really justify it to myself.

Three course meal for one: Cook toast and butter. Fry egg. heat baked beans. Eat in any order you like but not all together. Of course you could make it a one course meal by assembling each item one on top of the other!!

I only use eggs for baking, but otherwise, your sandwich sounds delightful!

Everyone thinks of a grilled cheese, but I am just as satisfied with two slices of bread, not toasted, and three slices of vegetarian cheese. Add some mild horseradish and you're ready to eat within minutes.

I like peanut butter with pickles or jam. This isn't a sandwich, but I also put peanut butter on celery and slices of granny smith apples. I get the boost of protein I need.

I love peanut butter and I also like to mix cheese. Something that I made the other night was: 1 sheet shop bought puff pastry. Mix cheddar, mascarpone and parmesan cheese withy fried onion. spread on pastry leaving about an inch all round. Slice large tomatoes and place on top. Cook in a hot oven for abut 45 minutes or until the pastry starts to burn. Eat if those around you don't get to it first. Sounds weird but is delicious!

I'm a huge fan of freshly hard boiled egg rolls, just as you describe and best when still warm.

Fresh veg are great cooked simply too. If you ever get your hands of fresh peas, they're best eaten just boiled with a knob of butter. Well, if you get them as far as the kitchen that is, normally they don't makeit that far! Oh, and corn on the cob. Delicious!

I love shelling peas although I have stopped growing them as I spent most of my time shelling pea moth grubs!! Grrrr.

Love the egg salad sandwich. But equal to it is the fried egg sandwich on toast with a slice of cheese.
My in-laws gave us some squash, which I sliced and sauted with a little butter and onion. Quite yummy!
