Are you good in Cracking Open an Egg?

Well, it sounds like you've tried everything. So, the only suggestion I have at the moment is to make a video of you cracking an egg (focusing on your hands) and then post a link to the vid.

Maybe then we could see what you're doing wrong and make new suggestions

I've seen guys knock them gainst something and whoa, its open.
I use a spoon. Just hit the egg crossways and then pull the opening apart with my fingers and pour out the contents.
I've seen guys do a kind of squeeze and then separate the two ends with the same hand and let the insides pour out - all in the same hand with the same motion.
I guess you learn in chef school.
I don't know any other way. Eggs are easy. Crack it and pour out the innards.
Unless you're into kitchen aerobatics. Then you might toss it, catch it with a single finger and presto - into the waiting bowl!

yes same with me! no matter how hard i try few pieces of the shell always fall into the bowl and it might eventually end up in the omelette or bulls eye. i dont think i'll ever learn how to do that properly.

That's funny! I'm not an expert, but I find that the best way is to crack it hard on the edge of a sturdy glass bowl (such as a pyrex dish). This usually makes quite a clean break. That's not to say that you won't get egg shell in the egg, but if you do it's not the end of the world. You just need to fish it out with one of the halves of egg shell. It seems that egg shell actually attracts other pieces of egg shell, a bit like a magnet. So it's really easy to scoop it up this way. And then you have a shell-free egg.

well i am pretty good at it i do the one handed way i find it eaasier that a way because most of the the hand is cooking.

i am by no means an expert on cracing an egg open so i tend to very much put it thru a egg opener/ seperator so as i don't have this very thing happen .

Well, there are some tips to doing it.
One way is to tap the egg till there is a crack line.
Turn it around and tap again to extend the crack line.
Do this till you see a very clear crack line around the whole egg.

Then use your finger nail, usually the thumb, do an indentation into the egg such that you break the shell. With both hands, use the two thumbs to pry open the egg shell where you broke the egg.

Wah~Lah~~~ perfectly cracked eggs. And the best part of using this method is? You rarely break the yokes!

I have been using this method for years! And I very, very rarely break the yokes when using this method to break the eggs into a bowl.
Particularly useful if you are breaking the eggs to bake a cake!

There's no real technique in cracking open an egg.. it's just the strength used and the angle of the egg only.. haha.. JUst hit on the centre of the egg and the egg will crack nicely, after which, just use your index finger to push open and the shell will remain intact as one piece and, there will not be any snow flake falling into your bowl.. haha

Oh I think I'm not so good but not so bad either. I can crack it open without pieces of the egg shell on the bowl and without deforming the yellow yolk's circular form hehe. But sometimes, if I'm in a hurry, everything turns out into a mess. hehe. I usually crack it open by tapping it lightly into something hard, then use both hands to carefully break the shell into two pieces. I find that effective, usually the crack is at the center.

I am bad! I suggest going to utube & see if they have a tutorial on it.Might as well they show everything else on,so why not..how to crack an egg professionaly.
