Homemade Bean Burger w/ Greens

Kidney Beans, Chick Peas, onion, mushroom mashed together with a bit of Olive oil. Form into patties and cook on oiled griddle for 5 min each side. Place on toasted whole grain bread and top with salsa and cheese and a tsp of sour cream. Greens, broccoli and spinach steamed together.

Spinach Mandarin Salad

I make this salad using baby spinach leaves, peacan halves, mandarin pieces and I pour a blue cheese vignarette over it. It is very good and high in iron.
